Elephant Garlic Salsa

I came across a lovely little company close to me called The Soul Patch. I always like to support and buy local produce and they grow the most delicious elephant garlic. For those of you that don’t know, elephant garlic is a variety of garlic with very large cloves and a tender, mild, slightly sweet flavor. Some people enjoy elephant garlic because it can be eaten raw and used in cooking for a hint of garlic flavor without being overwhelming. If you’re after a delicious healthy dip to eat with some raw vegetables when you feel peckish, why not try this salsa recipe:


  • 1lb plum tomatoes
  • 1 tbsp basic
  • ½ onion
  • ¼ lime pulp
  • 1 whole elephant garlic
  • 1 chilli
  • ½ green pepper
  • 1tsp salt.


  • You can use any chopping method to get the texture you like. Finely chop elephant garlic, chili and basil. Chop and add the balance of ingredients using the seeds of your hot peppers to adjust heat. Adjust ingredients to your preferred taste, after your first trial.
